Rich Gluten Free Brownies

About the recipe: This is a classic rich brownie recipe that I have developed over the years. This recipe is one that can be easily made dairy free by substituting ½ cup dairy free butter in place of real butter (I like to use Smart Balance) and by making sure that your cocoa powder and chocolate chips are dairy free.

1 cup sugar

½ cup melted butter

1 teaspoon vanilla extract

2 eggs

¼ teaspoon baking powder

¼ teaspoon salt

1/3 cup cocoa powder

½ cup gluten free flour

½ cup chocolate chips (optional)

Preheat oven to 350 degrees. Grease an 8×8 pan. Mix sugar with melted butter. Add vanilla and eggs and mix until well combined. Add baking powder, salt, and cocoa powder and mix well. Add flour and mix until just combined. Mix in chocolate chips. Pour batter into greased pan and cook at 350 for approximately 30 minutes until set and top is crusty.
