About the recipe: This recipe can be made dairy free by substituting almond or soy milk for regular milk. You can use any frozen veggies you like, but I find peas, carrots, and broccoli go well with this one.
1 1/2 cups gluten free long grain white rice
3 cups water
1 (15 oz) bag frozen vegetables thawed
1/4 cup gluten free soy sauce
In a medium sauce pan, over high heat, bring water to a boil. Add Rice and reduce temperature to low. Cover and let simmer for 15 minutes. Remove from heat and mix in thawed veggies and soy sauce. Recover to keep warm and set aside.
2 gluten free hot dogs finely chopped
1/4 cup milk
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
Over medium heat crack eggs into a large frying pan. (If NOT using non-stick I recommend you grease the pan first.) Scramble eggs and mix in hot dogs, milk, and seasonings. Cook over medium, heat stirring often, until eggs are no longer runny.
In a large bowl, mix together eggs and rice. Serve warm.
