Beef Stir Fry

About the recipe: This simple stir fry recipe is sure to be one that the whole family enjoys. I try to pick vegetables to add that my kids find appealing. You can add or substitute any vegetables that you wish.

1-1.5lb top round steak cut into bite sized pieces

2 tablespoons gluten free soy sauce

2 tablespoons teriyaki sauce

½ tablespoon garlic powder

½ teaspoon salt

2 cups broccoli chopped

1 ½ cups carrots chopped

1 ½ cups short grain white rice

½ cup frozen mixed vegetables

½ teaspoon salt

a sprinkle of teriyaki and soy sauce (optional)

In a medium saucepan bring 3 cups water to a boil. Add uncooked rice and cover with a lid. Turn heat to low and let simmer for 15 minutes, then set aside.

Place beef in a large skillet and mix in soy sauce, teriyaki sauce, garlic powder, and salt. Cook beef over medium high heat, 12-15 minutes until beef is cooked through. Stir frequently. Remove beef from pan but leave the juices.

Turn heat to medium. Add broccoli, carrots, frozen vegetables to the skillet. Sprinkle salt and a bit of soy sauce and teriyaki sauce (optional) over the vegetables.  Cover with lid and let simmer for 5-10 minutes until vegetables are soft.

In a large bowl mix together rice and beef. Add the vegetables and stir to combine. Serve while still warm.
