Basic Crepes

About the recipe: This one is my basic go-to crepe recipe. It goes well with so many things (butter, fruit, syrup) just to name a few. You can easily make them dairy free by substituting almond milk and dairy free butter.

1 cup gluten free flour

2 tablespoons sugar

¼ teaspoon salt

1 cup milk

½ teaspoon vanilla

2 tablespoons butter

2 eggs

Mix together dry ingredients. Stir in milk and vanilla. Add butter and mix well. Beat in eggs until batter is smooth. Grease a medium sized frying pan and preheat over medium high heat. Add the batter, a little less than a fourth cup, to the pan. Quickly tip and swirl the pan so that the bottom of the pan is evenly coated. Flip once the edges of the crepe are set. Careful! They will cook quickly. Serve with fresh fruit or maple syrup.
