Scrambled Eggs

About the recipe: Since our family went gluten free eggs have quickly become a staple for us. They are naturally gluten free, full of protein, and can be made so many different ways! This scrambles egg recipe is super easy. It can be made dairy free by substituting a dairy free milk.

11 eggs

¼ cup milk

¼ cup chopped green onion

1 teaspoon salt

1 teaspoon garlic powder

¼ teaspoon ground black pepper

¾ cups chopped spam

¾ cups peeled diced potatoes (I prefer red, but you can use any that you like)

Boil potatoes in a medium sized saucepan until tender. Drain, and set aside.

In a large bowl beat together eggs and milk. Add in the rest of the ingredients and mix well. Heat a large non-stick frying pan over medium heat and pour in eggs. Cook over medium heat, stirring frequently until eggs have set. Remove from heat and serve warm.
