Spamy Potatoes

About the recipe: This recipe is one straight out from the 1960’s. My mom made this quite a bit for me growing up and now I make it for my wee ones. Its super simple, super easy, and a family pleaser. This recipe can be made dairy free by substituting a dairy free butter and a dairy free cheese or omitting cheese.

1 (12 oz) can of spam sliced

7-8 medium potatoes peel and sliced

8 oz cheddar cheese sliced

¼ cup of butter

½ teaspoon salt

Preheat oven to 375 degrees. Grease a 8 ½ x 4 ½ inch loaf pan. Place an even layer of potatoes on the bottom of the loaf pan. Plop several spats of the butter, about ¼ teaspoon in size, over the potatoes. Sprinkle 1/8 teaspoon of salt over potatoes. Repeat, there should be between 4-5 layers.

Bake for 30-40 minutes until potatoes are just soft when poked with a fork. Place a layer of spam on top of the potatoes and continue to bake for 10 or so minutes, until spam is just starting to brown. Remove from oven and layer on the cheese. Bake for 5-10 minutes until cheese has melted.
