Sausage Egg Wraps

About the recipe: I love thinking of new breakfast recipes to fill up my children’s bellies and prepare them for a day of learning and play. I love to make these on a Sunday evening and wrap them up in plastic and store them in the fridge for an easy breakfast throughout the week. I just unwrap them and pop them in the microwave for 30 or so seconds and they’re good to go! I love using Mission Gluten Free Flour Tortillas, but you can use any that you like.

 1 (16 oz) package Jimmy Dean Regular Pork Sausage

12 large eggs

½ teaspoon salt

¼ teaspoon ground black pepper

¼ cup almond milk

2 packages of 6 gluten free flour tortillas

In a medium frying pan, over medium-high heat, brown the sausage. Drain the grease, remove sausage from pan, and set aside. In a large bowl whisk together eggs, seasonings, and milk. Add eggs to frying pan and cook over medium heat, stirring frequently until eggs have set. Divide eggs and sausage up between tortillas and roll them up.
