About the recipe: I have modified this recipe from Betty Crocker’s Cinnamon Biscuit Fans recipe to make it gluten and dairy free. This simple yet delicious recipe lets you enjoy all the yumminess of a cinnamon roll without all the pesky yeast work. I recommend using Bob’s Red Mill 1-1 Gluten Free Baking Flour with this one. You can use another flour blend, though, if it has xanthan gum in it. Smart Balance Original “butter” is also the only dairy free butter I have found that works with this one. Soft margarine spreads should be avoided.
2 cups gluten free flour (see note above)
2 tablespoons sugar
1/2 teaspoon salt
3 teaspoons baking powder
1/3 cup chilled Smart Balance Original “butter”
1/2 – 3/4 cup almond milk
3 tablespoons softened Smart Balance Original “butter”
4 tablespoons sugar
1 1/2 teaspoons cinnamon
Move oven rack to middle position. Heat oven to 425 degrees. Generously grease 8-inch cake pan.
In a large bowl sift together flour, 2 tablespoons sugar, salt, and baking powder. Cut in 1/3 cup chilled butter. Dough should resemble sand/small pebbles. Add milk 1/4 cup at a time working dough until it pulls away from the side of the bowl. Careful not to let the dough get too soggy. It should have somewhat of a playdough texture and workability.
Lay a large piece of saran wrap out and lightly grease one side. Place dough onto greased saran wrap and form dough into a mound. Take another piece of saran wrap and lay it on the dough. Using rolling pin roll out dough to form a rough rectangle that’s about 1/4 inch thick. Gently pull off top layer of saran wrap. Take softened butter and smother the top side of the dough. Mix 4 tablespoons sugar with 1 1/2 teaspoon cinnamon. Sprinkle cinnamon sugar mixture onto the buttered dough.
Using the bottom layer of saran wrap gently roll up dough. Then, using a sharp knife, slice rolled dough every 2-3 inches. Take dough sections and place spiral side up in greased cake pan. Bake for 25-28 minutes until tops are just starting to turn golden.
½ cup powdered sugar
2-3 tablespoons milk
Mix together vanilla and powdered sugar. Add milk a tablespoon at a time, mixing after each addition, until just runny. Pour evenly over warm biscuits.
