Gluten Free Banana Oat Muffins

1 1/2 cups Bob’s Red Mill 1to1 Gluten Free Baking Flour

1 cup gluten free rolled oats

1/2 cup white sugar

5 teaspoons baking powder

1/2 teaspoon salt

3/4 cup almond milk

1 egg, beaten

1/3 cup Smart Balance Original butter, melted

1/2 teaspoon vanilla extract

1 cup mashed, very ripe bananas

Grease or line 12 muffins tins. Preheat oven to 400 degrees.

In a large bowl sift together dry ingredients. Stir in milk and egg. Add in melted Smart Balance and vanilla, and stir well. Add in Bananas and mix until just combined. Scoop batter into prepared tins, about 1/3 cup at a time. Bake in preheated oven for approximately 20 minutes, until tops are golden.
