Dairy Free Hassleback Potatoes

4 medium potatoes

¼ cup Smart Balance Original butter alternative, melted

¾ teaspoon salt

¾ teaspoon garlic powder

¼ teaspoon ground pepper

1 tablespoon minced green onion

1-2 tablespoons bacon bits

Preheat oven to 375 degrees. Using a fork as your guide, make slits in potatoes, every 3-4mm. Leave about ½ an inch at the base of the potato, un-sliced. Place potatoes onto an oven safe baking dish. Mix together the Smart Balance, seasonings, and green onion. Brush potatoes with the butter alternative blend, being sure to get in between the slits. Sprinkle tops with bacon bits (optional). Bake in preheated oven for 60-90 minutes, or until tender.
