Gluten Free White-Chocolate Cranberry Cookies

1 cup Smart Balance Original butter-alternative

1 cup brown sugar (packed)

1 cup white sugar

2 ½ teaspoons vanilla

2 eggs

1 teaspoon baking soda

½ teaspoon salt

3 cups Bob’s Red Mill 1-1 Gluten Free Baking Flour

1 ½ cups gluten free dairy free white chocolate chips

1 cup dried cranberry’s (I use Craisins)

Preheat oven to 350 degrees. In a large bowl cream together Smart Balance and sugars. Stir in vanilla and eggs. Mix in baking soda, salt, and flour, until well combined. Stir in chips and cranberries.

Scoop batter by rounded teaspoon onto un-greased cookie sheet. Bake in preheated oven for 12-15 minutes, or until edges are just starting to brown.
