Gluten Free Breakfast Casserole

About the recipe: This recipe was inspired by Christmas Breakfast Sausage Casserole. I recommend using Franz Gluten Free Mountain White Bread as I have found it toasts quite nicely. I also recommend using Dairy Free Follow Your Heart Pizzeria Blend Shreds.

6 slices gluten free bread

1lb cooked sage ground pork sausage

4 large eggs

2 cups almond milk

½ teaspoon salt

½ teaspoon garlic powder

1 teaspoon mustard powder

4oz shredded dairy free cheese

Preheat oven to 200 degrees. Slice bread into cubes, and place onto cookie sheet. Bake in preheated oven for 30 minutes.

Grease a 9×13 casserole dish. In a large bowl, beat eggs. Stir in almond milk, seasonings, cheese, and sausage. Mix in toasted cubed bread. Pour into prepared pan. Cover with tin foil and refrigerate for at least 8 hours.

Preheat oven to 350 degrees. Keep the dish covered in foil and bake in oven for 50 minutes. Lower heat to 325 degrees and remove tin foil. Bake for another 20 minutes or until set.
