Hannah’s Potato Casserole

About the recipe: This is the ultimate comfort food dinner, and super kid friendly too! If you can eat dairy, you can use regular shredded Parmesan (just be sure its gluten free too!) You can also use russet or red potatoes, but I think yellow potatoes complement the recipe the best.

3 lbs yellow potatoes chopped

1/4 cup Earth Balance, melted

1 teaspoon salt

1/2 teaspoon ground black pepper

1 teaspoon garlic powder

1 (6 oz) bag of Hormel pepperoni

1/2 cup sliced black olives

1 (4 oz) container Follow Your Heart Dairy Free Parmesan Style Shredded Cheese Alternative

Preheat oven to 420 degrees. In a large bowl mix together chopped potatoes, Earth Balance, and seasonings. Bake potatoes in preheated oven for 20-30 minutes, until tender. Remove potatoes from oven and allow to cool for 15 minutes. Turn oven down to 350 degrees.

While potatoes cool, slice pepperonis into fourths. Place potatoes into a 9×13 inch casserole dish and spread evenly. Spread sliced pepperoni and olives over top. Evenly sprinkle cheese over top. Cover dish with tin foil. Bake for 20 minutes.
